Ingredients/Components

  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • brown sugar - 1/2 c
  • butter - 1/2 c
  • water - 1/2 c
  • soda - 1/2 tsp
  • egg - 1 item
  • sifted flour - 2 c
  • white sugar - 1/2 c
  • pitted dates - 1 lb

How to make date pinwheel cookies:

Note: Eleven ounces of dates will do.

Combine dates, water and 1/2 cup white sugar in saucepan. Cook until thick, stirring constantly. Cool. Thoroughly cream butter and sugar. Add egg and vanilla; beat well. Sift dry ingredients. Add to creamed mixture. Stir until smooth after each addition. Divide dough in half. Rollup like jelly roll. Wrap in wax paper with open on bottom. Repeat with second half. Chill until firm. Cut into 1/4-inch slices. Bake in hot oven at 400° for 8 to 10 minutes.
