- sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- baking soda - 1 tsp
- boiling water - 1 c
- shortening - 1/2 c
- all-purpose flour
- chopped walnuts - 3/4 c
- snipped pitted dates 8 oz
How to make date cake:
Heat oven to 350°. Grease and lightly flour a 13 x 9 x 2-inch baking pan. Combine dates and boiling water; cool to room temperature. Stir together the flour, baking soda and 1/4 teaspoon salt. In a large mixer bowl, beat shortening about 30 seconds. Add sugar and vanilla and beat until fluffy. Add eggs, one at a time, beating 1 minute after each. Add dry ingredients and cooled undrained date mixture alternately to beaten mixture, beating after each addition. Stir in nuts. Spread in pan. Bake in a 350° oven for 30 to 35 minutes.
