Cucumber soup
Ingredients/Components
- salt - 1/2 tsp
- margarine - 2 Tbsp
- dry mustard - 1/4 tsp
- chopped onion - 1/4 c
- sprigs parsley - 2 item
- diced raw potatoes - 1/2 c
- watercress leaves - 1 c
- diced unpeeled cucumbers - 2 c
- chicken broth or 1 c - 2 c
How to make cucumber soup:
Simmer above 15 minutes or until potatoes are tender. Cool. Puree in electric blender. Correct seasoning. Can be served cold or hot.Recipe categories: Lunch/snacks, Main dish, Bisques/cream soups.
