Ingredients/Components
- raisins - 1/2 c
- salad oil - 2 Tbsp
- frozen peas - 1 c
- dry white wine - 3/4 c
- cloves garlic, chopped - 2 item
- large onion, chopped - 1 item
- fryer, cut up - 1 (3
- large green pepper, chopped - 1 item
- pitted black olives - 1/2 c
- dry oregano - 3/4 tsp
- can tomato sauce or chopped tomatoes - 1 oz
- small, thin skinned potatoes, in 1-inch chunks - 4 item
- dry cumin - 3/4 tsp
How to make cuban chicken:
Simmer chicken in oil 15 minutes. Remove. To pan, add garlic, onion and green pepper. Cook 4 minutes. Add tomato sauce, potatoes, spices, wine, raisins and olives. Add chicken.
