  • frozen peas - 1 c
  • dry white wine - 3/4 c
  • cloves garlic, chopped - 2 item
  • large onion, chopped - 1 item

  • large green pepper, chopped - 1 item
  • pitted black olives - 1/2 c
  • dry oregano - 3/4 tsp
  • can tomato sauce or chopped tomatoes - 1 oz
  • small, thin skinned potatoes, in 1-inch chunks - 4 item
  • dry cumin - 3/4 tsp

How to make cuban chicken:

Simmer chicken in oil 15 minutes. Remove. To pan, add garlic, onion and green pepper. Cook 4 minutes. Add tomato sauce, potatoes, spices, wine, raisins and olives. Add chicken. Simmer about 35 minutes (until done). Stir in frozen peas. Cook until peas
