Ingredients/Components
- sugar - 1 tsp
- pkg - 2 oz
- salt - 1 item
- pepper - 1 item
- chopped onions - 3 item
- bay leaf - 1 item
- oregano - 1 item
- olive oil - 3 Tbsp
- white cooking wine - 1 Tbsp
- chopped green peppers - 2 item
- garlic cloves - 18 item
- can sweet red pimientos - 1 item
How to make cuban black beans:
Rinse beans with water and leave in pressure cooker, soaking in water (twice the amount of beans) overnight or at least for 3 hours.Add to soaking beans: 1 onion (chopped), 1 green pepper (chopped), 8 garlic cloves and 1 bay leaf.
In morning, cook for 30 minutes. In a separate pot, saute in olive oil (in this order): 10 garlic cloves (finely chopped), 2 onions (finely chopped), 1 green pepper (finely chopped) and 1 can sweet red pimientos (finely chopped) with its water, white wine, salt, oregano and pepper. Add to beans. Taste. If it is salty enough, then add 1 teaspoon sugar and let simmer 20 minutes.
A food processor is a good way to chop all ingredients.
