Crisp sweet pickles
Ingredients/Components
- salt - 1 Tbsp
- water - 2 gal
- vinegar - 2 qt
- cloves - 1 tsp
- white sugar - 9 c
- celery seed - 1 tsp
- lime - 2 c
- mixed pickling spice - 1 tsp
- cucumbers, sliced 1/4-inch thick - 7 lb
How to make crisp sweet pickles:
Cover cucumbers with solution of 2 cups lime in 2 gallons water; soak 24 hours. Rinse pickles well and cover with fresh water; soak 3 hours longer. Drain and cover with mixture of vinegar, sugar, salt, celery seed, cloves and pickling spice. Soak pickles in syrup overnight, then boil 40 minutes. Pack in jars and seal.
