  • salt - 2 tsp
  • butter - 1/4 c
  • light cream - 2 c
  • pepper - 1 tsp
  • ground cumin - 2 tsp
  • celery seed - 1 tsp
  • large onion, chopped - 1 item
  • medium zucchini, chopped - 3 item
  • bunch broccoli, chopped - 1 item
  • medium potatoes, peeled and shredded - 2 item
  • medium sweet potatoes, peeled and chopped - 3 item
  • chicken broth 6 cans - 2 qt

How to make creamy vegetable soup:

In a large kettle saute onion in butter until transparent but not browned. Add sweet potatoes, zucchini and broccoli. Saute lightly for 5 minutes or until crisp-tender. Stir in broth. Simmer for a few minutes. Add potatoes and seasonings. Cook another 10 minutes or until vegetables are tender. Stir in cream and heat through.
