  • butter or margarine - 1/4 c
  • salt - 2 tsp
  • light cream - 2 c
  • pepper - 1 tsp
  • chicken broth - 2 qt
  • ground cumin - 1 2
  • celery seed - 1 tsp
  • medium zucchini, chopped - 3 item
  • large onion, chopped fine - 1 item
  • bunch broccoli, chopped - 1 item
  • medium potatoes, peeled and shredded - 2 item
  • medium sweet potatoes, peeled and chopped - 3 item

How to make creamy vegetable soup:

In a large kettle, saute onions in butter until transparent but not browned. Add the sweet potatoes, zucchini and broccoli; saute lightly for 5 minutes or until crisp-tender. Stir in broth; simmer for a few minutes. Add potatoes and seasonings; cook another 10 minutes or until vegetables are tender. Stir in cream and heat through. Yield: 12 to 16 servings (4 quarts).
