Creamy potato salad
Ingredients/Components
- sugar - 2 tsp
- salt
- vinegar - 2 tsp
- chopped onion - 1/2 c
- chopped celery - 1 c
- prepared mustard - 2 tsp
- mayonnaise
- medium potatoes - 6 item
- celery seed - 2 tsp
- chopped sweet pickle - 1/3 c
- hard-cooked eggs, coarsely chopped - 2 item
How to make creamy potato salad:
In a covered pan, cook potatoes in salted boiling water 25 to 30 minutes or until tender, drain well. Peel and cube potatoes. Transfer to a large bowl. Add celery, onion and sweet pickle. Combine mayonnaise, sugar, celery seed, vinegar, mustard and salt. Add this mixture to potatoes. Toss lightly to coat. Carefully fold in chopped eggs.
