Creamy chicken salad
Ingredients/Components
- plain low-fat yogurt - 1/4 c
- mayonnaise - 2 Tbsp
- ground black pepper - 1/8 tsp
- torn spinach leaves - 1/2 c
- chopped, cooked chicken - 2 c
- dried tarragon - 1/4 tsp
- small garlic clove, minced - 1 item
- 1-inch julienne zucchini strips 1 small - 3/4 c
- chopped carrots 1 small - 1/4 c
- whole spinach leaves - 1 item
How to make creamy chicken salad:
In a medium-size bowl, combine chicken, zucchini, spinach, carrots and walnuts; toss.In a small bowl, combine remaining ingredients; pour over salad. Toss well. Cover and refrigerate about 2 hours. Serve on whole spinach leaves. Makes 4 servings, about 3/4 cup each.
