Ingredients/Components
- water - 1 c
- shortening - 1/2 c
- plain flour - 1 c
- salt - 1/4 tsp
- eggs unbeaten - 4 item
- sugar
- flour - 5 Tbsp
- cold milk - 1/4 c
- egg yolks, beaten - 3 item
- milk, scalded
- vanilla - 1/2 tsp
- egg whites, beaten stiff - 3 item
How to make cream puffs:
Filling:2/3 c. sugar5 Tbsp. flour1/8 tsp. salt1/4 c. cold milk3 egg yolks, beaten1 1/2 c. milk, scalded1/2 tsp. vanilla3 egg whites, beaten stiff Heat shortening and water to boiling. Add flour and salt; stir constantly until mixture forms thickened ball. Remove from heat. Add eggs, one at a time; beat mixture. Drop from tablespoon onto greased baking sheet. Bake at 400° for 45 to 50 minutes. Makes 8 large puffs. Before filling, cut off the top of each puff and set in warm oven to dry for about 3 minutes.Filling: Mix sugar, flour and salt together with cold milk. Add beaten egg yolks, blending together. Gradually add scalded milk to egg mixture; cook on low heat, stirring, until mixture thickens. Add vanilla. Cool. Fold in beaten egg whites. Spoon into center of cream puffs. Put top of each and sprinkle with powdered sugar.
