Cranberry poppy seed loaf
Ingredients/Components
- sugar - 3/4 c
- vanilla extract - 1 tsp
- baking powder - 1 Tbsp
- all-purpose flour
- poppy seed - 2 Tbsp
- skim milk - 1 c
- margarine, melted - 1/3 c
- grated lemon peel - 2 tsp
- fresh or frozen cranberries, chopped - 1 c
- Egg Beaters - 1/4 c
- confectioners sugar glaze optional - 1 item
How to make cranberry poppy seed loaf:
Grease bottom of an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan; set aside. In a large bowl, mix flour, sugar, poppy seed and baking powder; set aside. Blend milk, margarine, egg product, vanilla and lemon peel. Stir into flour mixture just until moistened. Stir in cranberries. Spread in prepared pan. Bake at 350° for 60 to 70 minutes or until done.
