  • sugar - 3/4 c
  • vanilla extract - 1 tsp
  • baking powder - 1 Tbsp
  • all-purpose flour
  • poppy seed - 2 Tbsp
  • skim milk - 1 c
  • margarine, melted - 1/3 c
  • grated lemon peel - 2 tsp
  • fresh or frozen cranberries, chopped - 1 c
  • Egg Beaters - 1/4 c
  • confectioners sugar glaze optional - 1 item

How to make cranberry poppy seed loaf:

Grease bottom of an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan; set aside. In a large bowl, mix flour, sugar, poppy seed and baking powder; set aside. Blend milk, margarine, egg product, vanilla and lemon peel. Stir into flour mixture just until moistened. Stir in cranberries. Spread in prepared pan. Bake at 350° for 60 to 70 minutes or until done. Cool. Drizzle with glaze, if desired.
