  • sugar
  • eggs - 2 item
  • salt - 1 tsp
  • almond extract
  • baking powder - 1 Tbsp
  • baking soda - 1 tsp
  • vegetable oil - 1/4 c
  • all-purpose flour - 4 c
  • low-fat milk
  • sliced almonds, divided
  • fresh or frozen cranberries, coarsely chopped - 2 c
  • carton nonfat vanilla yogurt - 1 oz

How to make cranberry almond bread:

Preheat oven to 350°. Grease bottoms of two 9 x 5-inch loaf pans.

In large bowl, combine flour, sugar, baking powder, baking soda, salt and 1 cup almonds. In another bowl, beat together milk, oil, yogurt, eggs and almond extract. Add to flour mixture, stirring just until dry ingredients are moistened. Gently stir in cranberries.

Divide batter evenly between loaf pans. Sprinkle evenly with remaining 1/3 cup almonds. Bake 45 to 55 minutes or until golden brown and toothpick inserted in center comes out clean. Cool in pan on wire rack.
