Ingredients/Components

  • sugar - 1 tsp
  • eggs - 3 item
  • milk
  • cornstarch - 4 tsp
  • vegetable oil - 2 Tbsp
  • all-purpose flour - 1/2 c
  • egg whites - 2 item
  • soy sauce - 2 tsp
  • curry powder - 1 tsp
  • stalks celery, finely chopped - 2 item
  • green onions, finely chopped - 8 item
  • dry sherry
  • cream or milk - 1/4 c
  • small yellow onion, finely chopped - 1 item
  • satay sauce - 1 Tbsp
  • Shrimp:2 cans crabmeat
  • 1/2 fresh uncooked large shrimp - 1 item
  • soft bread crumbs from 8 to 12 slices bread - 2 3

How to make crab stuffed shrimp:

Shrimp:2 cans crabmeat2 egg whites4 tsp. cornstarch1 Tbsp. dry sherry1 Tbsp. soy sauce8 green onions, finely chopped2 stalks celery, finely chopped1 1/2 fresh uncooked large shrimp1/2 c. all-purpose flour3 eggs3 Tbsp. milk2 to 3 c. soft bread crumbs (from 8 to 12 slices bread)3 c. vegetable oil For Sauce: Heat oil in small saucepan. Cook onion in the oil over medium heat until transparent, about 3 minutes. Add curry powder. Cook and stir 1 minute. Add sherry, satay sauce, sugar and soy sauce. Cook and stir 2 minutes. Blend in cream. Bring to boil. Boil 2 minutes. Keep warm.

For Shrimp: Drain and flake crabmeat. Blend egg whites, cornstarch, sherry and soy sauce in bowl. Add crabmeat, onions and celery. Mix well.

Remove shells from shrimp, leaving tail intact. Remove back veins from shrimp. Cut deep slit into, but not through back of each shrimp. Flatten shrimp by pounding gently with mallet or rolling pin.

Spoon crabmeat mixture onto each shrimp and press into shrimp with back of spoon or small spatula.

Coat each shrimp lightly with flour. Beat eggs and milk with fork in shallow bowl until blended. Place each shrimp, stuffed side up, in egg mixture, then spoon mixture over shrimp to cover completely. Coat each shrimp completely with bread crumbs, pressing crumbs lightly onto shrimp. Place shrimp in single layer on cookie sheets or plates. Refrigerate for 30 minutes.
