Corn scallop
Ingredients/Components
- eggs - 2 item
- pkg - 1 oz
- salt - 1/2 tsp
- pepper - 1/4 tsp
- instant minced onion - 2 tsp
- can cream-style corn - 1 oz
- can whole kernel corn - 1 oz
- coarsely crushed soda crackers - 2 c
- or 1/4 stick melted butter or margarine - 4 Tbsp
How to make corn scallop:
Drain liquid from whole kernel corn into a cup. Save 1/4 cup of liquid. Beat eggs lightly in large bowl. Stir in 1/4 cup of liquid and other ingredients. Spoon into 8-cup baking dish. Bake at 325° for 1 hour or until set. Let stand 5 minutes before serving. It can be made with Jack cheese or Mozzarella but Swiss is better.P.S. I usually serve this dish as a side dish for Thanksgiving.
