Ingredients/Components

  • eggs - 2 item
  • pkg - 1 oz
  • salt - 1/2 tsp
  • pepper - 1/4 tsp
  • instant minced onion - 2 tsp
  • can cream-style corn - 1 oz
  • can whole kernel corn - 1 oz
  • coarsely crushed soda crackers - 2 c
  • or 1/4 stick melted butter or margarine - 4 Tbsp

How to make corn scallop:

Drain liquid from whole kernel corn into a cup. Save 1/4 cup of liquid. Beat eggs lightly in large bowl. Stir in 1/4 cup of liquid and other ingredients. Spoon into 8-cup baking dish. Bake at 325° for 1 hour or until set. Let stand 5 minutes before serving. It can be made with Jack cheese or Mozzarella but Swiss is better.

P.S. I usually serve this dish as a side dish for Thanksgiving.
