Kansas corn scallop

Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- evaporated milk - 2/3 c
- butter, melted - 1/4 c
- pepper - 1/4 tsp
- instant minced onion - 2 Tbsp
- can cream-style corn - 1 item
- can whole-kernel corn, drained, reserving liquid - 1 item
- corn liquid - 1/4 c
- saltine crackers, crushed - 2 c
- Velveeta cheese, diced - 12 oz
How to make kansas corn scallop:
Drain whole kernel corn, reserving 1/4 cup of liquid. Beat eggs slightly in a large bowl. Stir in corn and 1/4 cup of liquid. Add cream style corn, evaporated milk, melted butter, onion, salt and pepper. Fold in saltines and diced cheese. Spoon into greased 2-quart baking dish. Bake at 325° for 1 hour.
