Ingredients/Components
- sugar - 1 c
- oil - 1/4 c
- dry mustard - 1 Tbsp
- Worcestershire sauce - 1 Tbsp
- small onion, chopped fine - 1 item
- apple cider vinegar - 3/4 c
- carrots, sliced - 2 lb
- stalks celery, chopped fine - 3 item
- medium bell pepper, chopped fine - 1 item
- tomato soup, undiluted - 1 c
How to make copper pennies:
Cook carrots in salted water until tender. Add finely chopped onion, bell pepper and celery to the drained carrots; set aside. Mix and bring to boil soup, sugar, oil, vinegar, dry mustard and Worcestershire sauce. Pour this hot mixture over vegetables. Put in ice box.Recipe categories: Low protein, Low sodium, Salads.
