Ingredients/Components

  • sugar - 1 c
  • oil - 1/4 c
  • dry mustard - 1 Tbsp
  • Worcestershire sauce - 1 Tbsp
  • small onion, chopped fine - 1 item
  • apple cider vinegar - 3/4 c
  • carrots, sliced - 2 lb
  • stalks celery, chopped fine - 3 item
  • medium bell pepper, chopped fine - 1 item
  • tomato soup, undiluted - 1 c

How to make copper pennies:

Cook carrots in salted water until tender. Add finely chopped onion, bell pepper and celery to the drained carrots; set aside. Mix and bring to boil soup, sugar, oil, vinegar, dry mustard and Worcestershire sauce. Pour this hot mixture over vegetables. Put in ice box.
