  • margarine - 1/2 c
  • onion - 1/2 c
  • 16 oz - 1 pkg
  • can cream of mushroom soup - 1 item
  • soup can milk - 1 item
  • Cheddar cheese - 1 c
  • chopped pimento - 2 Tbsp
  • small green pepper, chopped - 1 item
  • cracker crumbs - 1 c

How to make confetti scalloped potatoes:

Melt butter and saute onions. Stir in potatoes, soup and milk. Add cheese and 1/2 crumbs. Pour in 9 x 12-inch casserole. Add rest of crumbs. Bake 40 minutes at 375°.
