Ingredients/Components
- butter - 1/2 c
- cans chicken broth - 3 3/4
- onion, finely chopped - 1 c
- dried parsley - 1/4 c
- celery, finely chopped - 1 c
- bell pepper, finely chopped - 1 item
- white rice
How to make confetti rice:
Preheat oven to 350°. Melt butter. Saute celery, onion and bell pepper for 5 minutes. Do not brown. Pour broth into 2-quart baking dish; add rice and stir for 3 minutes. Add sauteed vegetables and cover dish. Bake for 45 minutes and remove from oven. Toss rice with parsley.Based on 6 servings. Per serving: 350 calories; 18 g fat; 665 mg sodium; 41 mg cholesterol.
