Ingredients/Components
- sugar - 3 c
- eggs - 5 item
- vanilla - 1 tsp
- milk - 1 c
- flour - 3 c
- coconut - 1 item
- baking powder - 2 tsp
- boiling water - 1 c
- shortening - 1/2 c
- egg whites - 3 item
- margarine - 1/2 c
- cream of tartar - 1/4 tsp
- can crushed pineapple, undrained - 1 item
- Add eggs and beat
How to make coconut pineapple cake:
Cream sugar, shortening and margarine. Add eggs and beat. Mix in flour and baking powder, adding milk alternately. Add vanilla and pour in 2 round greased and floured pans. Bake at 350° for 30 minutes. Cover first layer with pineapple and top second layer with Boiled Frosting.Boiled Frosting:3 c. sugar1/4 tsp. cream of tartar1 c. boiling water3 egg whites3/4 tsp. vanilla Cook to 242° and pour syrup over beaten egg whites.
