Ingredients/Components

  • sugar - 2/3 c
  • milk - 2 c
  • salt - 1/4 tsp
  • flour - 1/2 c
  • vanilla flavoring - 1 tsp
  • egg yolks - 3 item
  • coconut
  • 9-inch pie shell - 1 item

How to make coconut cream pie:

Mix sugar, flour and salt. Beat egg yolks; add milk. Stir into flour mixture, blending well. Cook over hot water until thickened, stirring constantly. Cover; cook 10 minutes. Cool slightly. Add vanilla and 1 cup of coconut. Pour into pie shell; cool. Cover with meringue and sprinkle the rest of coconut over meringue. Return to oven at 325° for 15 to 20 minutes, or until brown.
