Coconut cream pie
Ingredients/Components
- sugar - 3/4 c
- vanilla - 1/2 tsp
- pkg - 1 oz
- salt - 1/8 tsp
- flour - 1/3 c
- butter - 2 Tbsp
- eggs, beaten - 2 item
- egg whites - 4 item
- milk, scalded - 2 c
How to make coconut cream pie:
Combine flour, salt, sugar and butter, in this order. Add scalded milk slowly, stirring constantly to large saucepan. Cook slowly on medium-low heat until thick and smooth, stirring constantly. Add 12 ounces coconut. Pour into baked pie shell.Meringue Topping: Preheat oven to 400°. Beat 4 egg whites on high speed. Add vanilla. Add salt. Sprinkle in sugar, two tablespoons at a time until egg whites are stiff. Sprinkle 2 ounces coconut on top. Bake 10 minutes or until golden brown.
