Ingredients/Components
- eggs - 2 item
- salt - 1 tsp
- flour - 1 c
- shredded coconut - 1 c
- pieces chicken breast boneless, skinless - 4 item
- Japanese bread crumbs - 6 c
How to make coconut chicken:
Pound chicken lightly; set aside. Beat eggs. Combine together bread crumbs, coconut and salt. Dredge chicken in flour; dip into beaten eggs and press firmly into crumb mixture. Repeat process for remaining chicken breasts. Deep-fry chicken in oil at 350° until golden brown. Finish cooking in 350° oven until it reaches internal temperature of 165°.
