- yellow cake mix - 1 item
- vanilla pudding - 1 serving
- water
- eggs - 4 item
- oil - 1/4 c
- coconut - 2 c
- nuts walnuts - 1 c
- Stir in coconut and walnuts
- pkg - 1 oz
- confectioners sugar
- milk - 2 tsp
- vanilla - 1/2 tsp
How to make coconut cake:
Blend cake mix, pudding mix, water, eggs and oil in large mixer bowl; beat for 4 minutes. Stir in coconut and walnuts. Pour into 3 greased and floured 9-inch pans. Bake at 350° for 35 minutes. Cool in pans for 15 minutes. Remove and cool on racks.Frosting:4 Tbsp. butter1 (8 oz.) pkg. cream cheese3 1/2 c. confectioners sugar2 c. coconut2 tsp. milk1/2 tsp. vanilla Melt 2 tablespoons butter in skillet. Add coconut; stir constantly over low heat until brown. Spread coconut on paper to cool. Cream 2 tablespoons butter and cream cheese. Add milk. Beat in sugar gradually. Blend in vanilla; stir in 1 3/4 cups coconut. Spread on top of layers; stack. Sprinkle with remaining coconut.Recipe categories: Desserts, Cakes, Egg.
