- sugar - 2 c
- eggs - 10 item
- flour - 4 c
- butter - 1 lb
- sherry - 1 c
- white raisins - 15 oz
- mixed candied fruit - 1 lb
- candied pineapple green - 1/2 lb
- candied whole red cherries - 1/2 lb
How to make christmas fruitcake:
In a large bowl, combine all candied fruit and raisins. Pour sherry over fruit. Soak overnight. Cream butter and sugar; beat in eggs until very light. Add flour (reserve a little to flour fruit).Preheat oven to 270°. Grease 3 (8 1/2 x 4 1/2 x 2 5/8-inch) loaf pans and line with greased paper. Bake for 2 hours and 20 minutes.
