  • sugar - 2 c
  • vanilla - 1 tsp
  • water - 1/2 c
  • egg whites - 2 item
  • white syrup - 1/2 c
  • pecans - 3/4 c
  • cherries - 3/4 c

How to make christmas divinity:

Combine sugar, water and syrup in a saucepan. Cook over low heat, stirring constantly, until sugar dissolves. Cook over high heat, without stirring, until mix reaches 260°. Beat egg whites until they form stiff peaks. Pour hot sugar mix in a thin stream over egg whites, beating constantly at high speed. Add vanilla and continue beating until mixture holds its shape (5 to 10 minutes). Stir in pecans and/or cherries if desired. Drop by teaspoons. Yields 3 dozen.
