Ingredients/Components

  • onions - 4 c
  • medium head cabbage - 1 item
  • green tomatoes - 10 item
  • green sweet peppers - 12 item
  • salt - 1/2 c
  • sugar - 6 c
  • celery seed - 1 Tbsp
  • mustard seed - 2 Tbsp
  • turmeric
  • cider vinegar - 4 c
  • water - 2 c

How to make chow-chow:

Chop vegetables. Place in a large container. Sprinkle with 1/2 cup salt. Let stand overnight covered with foil. Next morning, rinse and drain. Combine remaining ingredients and pour over vegetables. Heat to boiling. Simmer 3 minutes. Pack in sterilized jars and seal. Makes approximately 9 pints.
