Chow-chow relish
Ingredients/Components
- sugar
- salt - 3 Tbsp
- vinegar
- ground ginger - 1/2 tsp
- dry mustard - 2 tsp
- chopped onions - 2 c
- celery seed - 2 tsp
- mustard seed - 1 tsp
- turmeric - 1 tsp
- chopped sweet green peppers - 2 c
- chopped cabbage 1 small head - 4 c
- chopped cauliflower 1 medium head - 3 c
How to make chow-chow relish:
Combine chopped vegetables; sprinkle with salt. Let stand 4 to 6 hours in a cool place. Drain well.Combine vinegar, sugar and spices; simmer 10 minutes. Add vegetables. Bring to boil and simmer 10 minutes more. Pour into hot sterile jars 1-inch from lid. Process in boiling water bath 10 minutes. Store in cool dark place. Makes 4 pints.
