Ingredients/Components
- sugar
- vinegar - 6 c
- ginger - 1 tsp
- prepared mustard - 2 Tbsp
- celery seed - 1 Tbsp
- chopped cabbage - 1 medium
- medium onions, chopped - 6 item
- mustard seed - 2 Tbsp
- turmeric - 1 tsp
- chopped green tomatoes - 1 qt
- green peppers, chopped - 6 item
- pickling salt - 1/4 c
- sweet red peppers, chopped - 6 item
- mixed whole pickling spices - 1 Tbsp
How to make chow-chow:
Combine vegetables and mix with salt. Cover; let stand overnight and drain. Mix mustard with a little vinegar in kettle. Add remaining vinegar, sugar and spices. Simmer 20 minutes. Add vegetables and simmer 10 minutes. Continue simmering while packing one hot sterilized jar at a time. Fill to within 1/8-inch from jar top. Make sure liquid covers vegetables. Seal each jar at once. Process in boiling water bath (212°F) for 5 minutes. Makes 6 to 8 pints. Use relish within 6 months.Recipe categories: American, Vegetables, North american.
