How to make chocolate eclair dessert:
Chocolate Icing:4 Tbsp. sweet milk4 Tbsp. cocoa1 stick margarine1 tsp. vanilla1 box powdered sugar Mix pudding according to directions. Beat in whipped topping. In a 13 x 9 x 2-inch container place a layer of graham crackers. Put 1/3 of pudding on top and spread evenly. Add another layer of crackers and another 1/3 of pudding, then another layer of crackers and last of pudding. Top with final layer of crackers.There are several toppings you can put on. This recipe is for chocolate but you can also use any canned pie filling. Once for a 4th of July luncheon, I covered the dessert with 1/3 cherry pie filling, 1/3 apple pie filling and 1/3 blueberry pie filling.
To make chocolate icing, combine milk, cocoa, margarine and vanilla in a saucepan. Bring to a boil. Remove from heat and beat in powdered sugar. Should be soft and spreadable. Refrigerate overnight.
