  • sugar - 1 c
  • vanilla
  • pkg
  • salt - 1/4 tsp
  • flour
  • baking powder - 1/4 tsp
  • baking soda - 1/4 tsp
  • egg - 1 item
  • margarine, softened - 1/2 c
  • cocoa powder - 1/2 c
  • Eagle Brand milk - 1/2 c
  • reserved cherry juice - 4 tsp
  • jar maraschino cherries about 48 - 1 oz

How to make chocolate covered cherry cookies:

Icing:1 (6 oz.) pkg. semi-sweet chocolate chips1/2 c. Eagle Brand milk4 tsp. reserved cherry juice In small bowl, stir together flour, cocoa, salt, baking powder and soda. In large bowl, beat together margarine and sugar on low speed of electric mixer until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to creamed mixture; beat until well blended. Shape dough into 1-inch balls; place on ungreased cookie sheet. Press down center of dough with thumb. Drain cherries, reserving juice. Place a cherry in the center of each one. In small pan, heat Eagle Brand and chocolate chips until melted. Stir in 4 teaspoons cherry juice. Spoon about 1 teaspoon frosting over each cherry, covering it. Thin frosting with more juice, if necessary. Bake about 10 minutes or until done. Cool on wire rack. Makes about 48.
