Chocolate-covered cherry cookies
Ingredients/Components
- sugar - 1 c
- vanilla
- pkg - 1 oz
- salt - 1/4 tsp
- flour
- baking powder - 1/4 tsp
- baking soda - 1/4 tsp
- egg - 1 item
- unsweetened cocoa powder - 1/2 c
- margarine - 1/2 c
- maraschino cherries - 1 (10
- Eagle Brand sweetened condensed milk - 1/2 c
How to make chocolate-covered cherry cookies:
Stir together flour, cocoa powder, salt, baking powder and soda. Beat together margarine and sugar on low speed of mixer until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to creamed mixture; beat until well blended. Shape dough into 1-inch balls. Place on ungreased cookie sheet. Press down center of dough with thumb. Drain cherries, reserving juice. Place a cherry in the center of each cookie.In saucepan, combine chocolate pieces and condensed milk; heat until chocolate is melted. Stir in 4 teaspoons of the reserved cherry juice. Spoon about 1 teaspoon frosting over each cherry, spreading to cover cherry. (Thin frosting with cherry juice, if necessary.) Bake at 350° about 10 minutes. Remove to wire rack; cool. Makes 48 cookies.
