Chocolate-covered cherry cookies
Ingredients/Components
- vanilla
- granulated sugar - 1 c
- pkg - 1 oz
- salt - 1/4 tsp
- baking powder - 1/4 tsp
- baking soda - 1/4 tsp
- egg - 1 item
- all-purpose flour
- unsweetened cocoa powder - 1/2 c
- butter or margarine, softened - 1/2 c
- can sweetened condensed milk not evaporated - 1/2 item
- reserved cherry juice - 4 5
- jar maraschino cherries about 48
How to make chocolate-covered cherry cookies:
Sift dry ingredients together. Beat margarine and sugar until fluffy. Add egg and vanilla and beat. Gradually add dry ingredients, beating until blended. Shape into 1-inch balls and place on ungreased cookie sheet. Press in center with thumb to make indentation. Drain cherries saving liquid. Place cherry in indentation. Prepare frosting.Frosting: Melt chocolate chips and mix with sweetened condensed milk and approximately 2 teaspoons cherry juice to get consistency of frosting. Add more juice if necessary. Put 1 teaspoon of this frosting on top to cover the cherry and then bake at 350° for 12 to 15 minutes.
