Ingredients/Components

  • butter - 2 Tbsp
  • Dijon mustard - 1/4 c
  • fresh lime juice - 2 Tbsp
  • fryer chicken breast halves, skinned and boned - 4 item
  • medium chunky taco sauce - 1/2 c
  • plain yogurt divided use - 6 Tbsp
  • lime, peeled and sliced into segments - 1 item

How to make chicken picante:

In large bowl, mix taco sauce, mustard and lime juice. Put in chicken, turn to coat; marinate for at least 30 minutes.

Melt butter over medium heat until foamy. Remove chicken from marinade, reserving marinade, and cook in butter about 10 minutes on each side, turning to brown evenly. Add reserved marinade and cook about 5 minutes more or until fork can be inserted with ease. Marinade should be slightly reduced and beginning to glaze. Remove chicken to serving plate.

Raise heat to high, boil marinade 1 minute and pour over chicken. Place 1 tablespoon of the yogurt on each piece of chicken and top with a lime segment. Serves 4.

This chicken dish won a prize at the national chicken cooking contest a few years back. Guests always love it; it is not laden with fat and it's easy to do, the perfect recipe.
