Ingredients/Components

  • margarine or butter - 2 Tbsp
  • pepper - 1/4 tsp
  • garlic salt - 1/2 tsp
  • chopped onion - 1/4 c
  • chopped celery - 1/3 c
  • chicken broth
  • can tomatoes, cut up - 1 1/2
  • long grain rice - 2/3 c
  • bay leaf - 1 item
  • chopped green pepper - 1/4 c
  • cubed cooked chicken or turkey - 2 c
  • bottled hot pepper sauce - 1/2 tsp
  • dried basil or thyme, crushed - 1 tsp

How to make chicken jambalaya:

In a large skillet cook celery, onion and green pepper in margarine or butter until vegetables are tender. Stir in the undrained tomatoes, chicken broth, rice, basil or thyme, garlic salt, pepper, hot pepper sauce and bay leaf. Bring to boiling; reduce heat. Cover and simmer about 20 minutes or until rice is tender. Stir in chicken; cook until heated through. Discard bay leaf. Makes 4 servings.
