  • flour - 1 c
  • oregano - 1 tsp
  • can tomato paste - 1 oz
  • salt and pepper - 1 item
  • cloves garlic - 3 item
  • black pepper - 1 Tbsp
  • thyme - 1 tsp
  • Accent - 2 tsp
  • red pepper - 1 tsp
  • bunch green onions, chopped - 1 item
  • large chopped onion - 1 item
  • large bell pepper - 1 item
  • dry parsley - 1 tsp
  • 2 cans tomatoes
  • chickens - 2 item
  • to 3 ribs celery - 2 item
  • Take off bone

How to make chicken gumbo:

Boil chickens with salt and pepper. Take off bone. Save 2 quarts stock.Roux:1 1/2 sticks oleo1 c. flour Make roux. Brown slowly in cast-iron skillet. Add onion, celery, bell pepper and garlic. Saute until tender. Add to roux along with your 2 quarts stock. Add tomato paste, tomatoes, Accent, parsley, oregano, thyme, salt, black pepper, red pepper and green onions. Simmer slowly for 3 to 4 hours. Sprinkle with gumbo file. Serve over rice.
