Chicken gumbo
Ingredients/Components
- salt - 2 Tbsp
- flour - 1 c
- oregano - 1 tsp
- can tomato paste - 1 oz
- salt and pepper - 1 item
- cloves garlic - 3 item
- black pepper - 1 Tbsp
- thyme - 1 tsp
- Accent - 2 tsp
- red pepper - 1 tsp
- bunch green onions, chopped - 1 item
- large chopped onion - 1 item
- large bell pepper - 1 item
- dry parsley - 1 tsp
- 2 cans tomatoes
- chickens - 2 item
- to 3 ribs celery - 2 item
- Take off bone
How to make chicken gumbo:
Boil chickens with salt and pepper. Take off bone. Save 2 quarts stock.Roux:1 1/2 sticks oleo1 c. flour Make roux. Brown slowly in cast-iron skillet. Add onion, celery, bell pepper and garlic. Saute until tender. Add to roux along with your 2 quarts stock. Add tomato paste, tomatoes, Accent, parsley, oregano, thyme, salt, black pepper, red pepper and green onions. Simmer slowly for 3 to 4 hours. Sprinkle with gumbo file. Serve over rice.Recipe categories: Main dish, Gumbo, Stew.
