Seafood gumbo
Ingredients/Components
- pkg - 2 oz
- salt
- flour - 1 c
- water - 10 c
- can tomato paste - 1 oz
- onions, chopped - 2 item
- black pepper - 1 Tbsp
- celery seed - 1 tsp
- parsley, chopped - 1/4 c
- cans tomatoes - 2 oz
- bay leaves - 6 item
- thyme - 1/2 tsp
- tarragon - 1/2 tsp
- Worcestershire - 6 Tbsp
- red pepper - 1 Tbsp
- bell pepper, chopped - 1 item
- bacon grease - 1 c
- shrimp, peeled - 3 lb
- lump crabmeat - 1 lb
- large bunch green onions, chopped - 1 item
- file powder - 1 item
- oysters, shucked - 1 qt
How to make seafood gumbo:
Heat the bacon grease in an iron pot until smoking. Stir in flour and make a dark brown roux by stirring over medium heat about 45 minutes. Add chopped onions and bell pepper and cook until limp. Heat 10 cups water in a large pot, then add roux mixture to pot. Add all other ingredients except seafood and file powder. Simmer at least 3 hours. Add shrimp 20 minutes before serving and oysters and crabmeat 5 to 10 minutes before serving. Serve in bowls over rice and sprinkle with file powder.Recipe categories: One Dish meal, Gumbo, Stew.
