Chicken green enchiladas
Ingredients/Components
- cooked chicken - 3 c
- chopped onions - 1/2 c
- grated Cheddar cheese - 1 item
- cream of chicken soup - 1 item
- flour tortillas - 1 item
- small container sour cream - 1 item
- sliced ripe olives - 3/4 c
- grated Jack cheese - 1 item
- sauce - 3/4 c
- large can green enchilada sauce or red - 1 item
How to make chicken green enchiladas:
Sauce: Mix the enchilada sauce, chicken soup and sour cream. Set aside. Mix the chicken, ripe olives, onions and 3/4 cup sauce. Put 1 1/2 cups sauce in bottom of greased 9 x 13-inch dish. Layer with 6 flour tortillas, chicken filling and cheese. Cover filling with remaining 6 flour tortillas, sauce, grated cheese and remaining sauce. Bake at 350° for 30 to 35 minutes. Let set for about 5 to 10 minutes before serving. This is better if you make ahead and let set for several hours before baking.Recipe categories: Chicken, Main dish, Poultry.
