- eggs - 2 item
- milk - 1 c
- salt - 1 tsp
- flour - 1/2 c
- Crisco - 3 Tbsp
- lemon juice - 2 Tbsp
- chopped onions - 1 Tbsp
- fine bread crumbs - 1/2 c
- parsley - 2 Tbsp
- chopped chicken - 2 c
How to make chicken croquettes:
Make a cream sauce by melting Crisco, flour and salt; add milk gradually. Cook over low heat until thick and smooth. Add chicken, onions and parsley. Spread in shallow greased pan; chill.Divide into 8 portions, shape into logs. With fork, slightly beat eggs and lemon juice. Dip croquette first in eggs, then in crumbs. Fry until golden brown.
