Cherry cobbler
Ingredients/Components
- sugar - 1 Tbsp
- milk - 1 Tbsp
- salt - 1/8 tsp
- cornstarch - 1 Tbsp
- water - 1/3 c
- baking powder - 3/4 tsp
- egg - 1 item
- all-purpose flour - 1/2 c
- margarine - 3 Tbsp
- fresh, frozen or canned unsweetened pitted tart red cherries - 4 c
How to make cherry cobbler:
For biscuit topping, in medium mixing bowl, stir together the flour, 1 tablespoon sugar, baking powder and salt. Using a pastry blender, cut in 2 tablespoons margarine and mix until resembles coarse crumbs. Make a well in center, then set the dry mixture aside.For filling, in medium saucepan, combine 3/4 cup sugar and cornstarch. Add cherries and water. Cook and stir until mixture is slightly thickened. Stir in remaining margarine. Keep hot. In small bowl, use a fork to beat together egg and milk. Add egg mixture all at once to the dry topping mixture. Using the fork, stir just until moistened. Transfer the hot filling to greased 8-inch round baking dish. Spoon topping into 4 mounds on top of filling. Bake at 400° for 20 to 25 minutes.
