Cheesecake supreme
Ingredients/Components
- sugar - 3/8 c
- vanilla - 1/2 tsp
- salt - 1/4 tsp
- flour - 3 Tbsp
- cornstarch
- water - 1 c
- egg yolks - 2 item
- sifted flour
- whipping cream - 1/4 c
- butter or oleo - 3/4 c
- grated lemon peel - 2 tsp
- Beat until creamy
- Cut in butter until mixture is crumbly
- or 5 eggs - 4 item
- small egg yolks, slightly beaten - 2 item
- sugar depending on tartness of berries - 1/2 3/4
How to make cheesecake supreme:
Combine first 3 ingredients. Cut in butter until mixture is crumbly. Add egg yolk and vanilla. Blend thoroughly. Put 1/3 of dough on bottom of 9-inch spring-form pan (sides removed). Bake in hot oven at 400° about 8 minutes or until golden. Cool. Attach sides to bottom. Butter and put remaining dough on sides to height of 1 3/4 inches.Filling:5 (8 oz.) pkg. cream cheese1/4 tsp. vanilla3/4 tsp. grated lemon peel1 3/4 c. sugar3 Tbsp. flour1/4 tsp. salt4 or 5 eggs1/4 c. whipping cream2 egg yolks Let cream cheese stand at room temperature to soften, 1 to 1 1/2 hours. Beat until creamy. Add vanilla and lemon peel. Mix next 3 ingredients and gradually blend into cheese. Add eggs and egg yolks, one at a time, beating after each just to blend. Gently stir in whipping cream. Turn into crust lined pan. Bake at 450° for 12 minutes. Reduce heat to 300° and bake 55 minutes more. Remove from oven, cool and loosen sides with spatula after 1/2 hour. Remove sides at end of 1 hour. Allow to cool 2 hours longer and glaze.Glaze:3 c. strawberries (two 10 oz. pkg.; frozen)1 c. water1 1/2 Tbsp. cornstarch1/2 to 3/4 c. sugar (depending on tartness of berries) Cook berries 2 minutes. Mix cornstarch and sugar. Stir into hot berry mixture. Bring to a boil stirring constantly. Cook until thick and clear. Add a few drops red food color.
