Lemon meringue cake
Ingredients/Components
- sugar - 2/3 c
- vanilla - 1 tsp
- salt - 1/4 tsp
- flour
- cornstarch - 1/2 c
- eggs, separated - 4 item
- water
- egg - 1 item
- margarine, softened - 1/2 c
- margarine - 2 Tbsp
- cream of tartar - 1/4 tsp
- lemon juice - 1/2 c
- grated lemon peel - 1 tsp
- Meringue:4 egg whites
How to make lemon meringue cake:
Filling:1 1/3 c. sugar1/4 tsp. salt4 eggs, separated1 tsp. grated lemon peel1/2 c. cornstarch1 3/4 c. water2 Tbsp. margarine1/2 c. lemon juice Meringue:4 egg whites1/2 c. sugar1/4 tsp. cream of tartar Crust: Mix together sugar, margarine, vanilla and egg; add flour. Press into a 9 x 13-inch ungreased pan. Bake at 350° for 10 to 15 minutes, until the edges are light brown.Filling: Combine sugar, cornstarch, salt and water. Cook over medium heat, stirring constantly, until the mixture comes to a boil. Remove from heat. Beat egg yolks slightly, add 1/2 cup hot mixture, then return to hot mixture and continue cooking until thick. Stir in butter, lemon peel and lemon juice. Pour over crust.
Meringue: Beat until meringue is stiff, spread over filling. Bake at 350° for 25 to 30 minutes or until golden brown. Refrigerate 1 hour before serving.
