- vanilla - 1/2 tsp

- flour - 3 Tbsp
- egg yolks - 2 item
- heavy cream - 1/4 c
- sifted flour - 1 c
- egg yolk - 1 item
- soft butter or margarine - 1/4 c
How to make cheesecake:
Filling:5 (8 oz.) pkg. cream cheese1 3/4 c. sugar3 Tbsp. flour1/4 tsp. vanilla5 eggs2 egg yolks1/4 c. heavy cream In medium bowl, combine flour, sugar and vanilla. Make a well in the center; add egg yolk and butter. Mix with fingers until dough cleans side of bowl. Form into ball, wrap and refrigerate for about 1 hour.Preheat oven to 400°. Grease side and bottom of a 9-inch spring-form pan. Remove side from pan. Roll 1/3 of dough on bottom. Bake for 8 to 10 minutes. Cool. Put pan back together and press the rest of the dough around the side of the pan.
Preheat oven to 500°. Make filling in a large bowl of electric mixer. Combine cheese, sugar, flour and vanilla. Beat at high speed just to blend. Beat in eggs and yolks, one at a time. Add cream, beating just until well combined. Pour mixture into a spring-form pan. Bake for 10 minutes. Reduce oven temperature to 250° and bake 1 hour longer. Let cheesecake cool in pan on wire rack. Top with fruit, if desired. Refrigerate overnight or 3 hours. Loosen pastry from side of pan with spatula. Remove side of spring-form pan. Cut into wedges.
