Ingredients/Components

  • salt - 2 tsp
  • paprika - 1 tsp
  • pepper - 1/2 tsp
  • grated Parmesan cheese - 3/4 c
  • chopped parsley - 1/4 c
  • lemon wedges - 1 item
  • melted butter or margarine - 1/2 c
  • parsley sprigs - 1 item
  • leaf basil - 1/4 tsp
  • whole oregano - 1/2 tsp
  • skinned, pan-dressed catfish fresh or frozen - 6 item
  • dry breadcrumbs or croutons - 1 c

How to make catfish parmesan:

Thaw frozen fish. Clean, wash and dry fish. Combine breadcrumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in butter and roll in crumb mixture.

Arrange fish in a well-greased baking dish. Bake at 375° about 30 minutes or until fish flakes easily when tested with a fork. Garnish with lemon wedges and parsley.

This is a lot easier than it looks at first. I keep all the spices and breadcrumbs already mixed in a shaker in the refrigerator and shake out and use as needed. Only pour out what you need and put back in the refrigerator what has not been touched by the fish.
