Ingredients/Components

  • butter, softened - 1 Tbsp
  • sugar - 2 c
  • eggs, separated - 3 item
  • grated Mozzarella cheese - 1 Tbsp
  • finely grated carrots - 2 c

How to make carrot pudding:

Preheat oven to 375°. Combine carrots, sugar, butter, cheese and egg yolks. Beat egg whites until soft peaks form; fold gently into carrot mixture. Pour into greased ovenproof dish and bake for about 1 hour. Serves 6.
