Ingredients/Components
- sugar - 1/4 c
- milk - 2/3 c
- salt - 1 tsp
- baking powder
- egg - 1 item
- sifted flour
- salad oil - 1/2 c
- orange rind - 1 Tbsp
- medium carrots, peeled and sliced thin - 2 item
How to make carrot muffins:
Sift dry ingredients together into a large bowl. Place milk, oil, egg, sugar, carrots and orange rind into blender and blend well together. Pour over dry ingredients and stir only until moistened. Spoon mixture into greased, lined muffin pans, filling 2/3 full. Bake at 425° for 25 minutes.Recipe categories: Breads, Quick breads, Muffins.
