  • cinnamon - 2 tsp
  • eggs - 4 item
  • salt - 1 tsp
  • flour - 2 c
  • oil
  • grated carrots - 4 c
  • baking powder - 2 tsp
  • baking soda - 2 tsp

How to make carrot muffins:

Combine dry ingredients in one bowl, then add remaining ingredients. Use paper cupcake holders or just cupcake pans. Bake at 350° for 30 to 35 minutes. Use toothpick for doneness. Makes 30 to 36 per batch.
