Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 1 tsp
- salt - 1/4 tsp
- flour
- brown sugar - 1/3 c
- oil - 2 Tbsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- egg whites - 2 item
- raisins - 1/3 c
- orange juice - 3/4 c
- shredded carrot - 1/2 c
- grated orange rind
How to make carrot muffins:
Combine first 6 ingredients. Mix well. Mix in a small bowl next 6 ingredients. Stir with wire whip. Add to dry ingredients. Mix slightly. Add raisins. Bake in a 375° oven for 20 minutes. Makes 12 muffins. Contains 120 calories and 3 fat grams.Recipe categories: Breads, Quick breads, Muffins.
