Ingredients/Components
- cinnamon - 2 tsp
- chopped pecans - 1/2 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- lemon juice - 1/2 c
- honey - 1/2 c
- egg, beaten - 1 item
- margarine, melted - 1/2 c
- carrots, grated - 1 c
- whole-wheat flour
How to make carrot muffins:
Combine flour, baking powder, baking soda and cinnamon. Combine rest of ingredients and add to dry ingredients. Stir until just moistened. Fill muffin pans 2/3 full. Bake at 350° for 20 minutes. Test for doneness.Recipe categories: Breads, Quick breads, Muffins.
