Ingredients/Components

  • milk - 2 c
  • salt - 1 tsp
  • flour - 1/4 c
  • margarine - 1/4 c
  • dry mustard - 1/4 tsp
  • pepper - 1/4 tsp
  • carrots, peeled and sliced - 12 item
  • tarragon - 1/4 tsp
  • small onion, sliced - 1 item
  • sharp Cheddar cheese, shredded - 1 c
  • fresh buttered bread crumbs - 2 c

How to make carrot casserole:

Cook carrots until tender; add the onion and cook 3 more minutes. Drain and set aside in a casserole dish. Make a cream sauce of the flour, margarine, tarragon, salt, mustard and pepper with milk. Stir and heat until thick, then add cheese. Mix in until melted. Pour cream sauce over carrots in casserole; top with bread crumbs. Bake at 350° for 30 minutes.
